The Chef

Hi! I'm a French chef

I'm happy to now call myself a Darwin local, and married to a born and raised Territorian. The Territory has such an incredible abundance of fresh, tropical food. My expertise includes sashimi/sushi, French and Italian cuisine. 

The Territory's produce offers so much for a chef. This propelled me to create Hawaiian inspired super fresh Poké Bowls while trying to reduce our carbon footprint as much as we can. 

I trained in Paris, France. I also trained at the Ecole du vin in Paris studying Oenology, which is the science of studying wine and winemaking.

I've worked in fast-paced kitchens in London, France, Spain, Argentina, and Canada.

Our committment

My philosophy is simple: fresh, high-quality food that tastes delicious is paramount.

We endeavour to source as much local produce as possible, from Rapid Creek Markets to local mango stalls, to herb plants we grow in our backyard.

Fish is sourced on the same day from the local fish shop.
Nothing is frozen.
